Invisible Apple Cake

This Invisible Apple Cake is as stunning as it is simple. It's a delicate custard cake, baked with layers of thinly sliced SweeTango® apples that melt together in the oven. The result is a light, gently sweet cake. Top with a dusting of powdered sugar and a dollop of cinnamon spiced whipped cream for the ultimate dessert.

Ingredients
Cake Batter
- 5 SweeTango® apples, peeled and cored
- Juice of 1 lemon
- 2 Tbsp unsalted butter, melted
- ¾ cup sugar
- ½ tsp salt
- 3 eggs, room temperature
- 1 tsp vanilla extract
- 1 cup flour
- ½ cup whole milk, room temperature
- 3 Tbsp apricot jam, warmed
- 1 Tbsp powdered sugar for dusting
Cinnamon Whipped Cream
- 1 cup heavy cream
- ¼ cup maple syrup
- 2 tsp ground cinnamon
- Pinch of salt
Directions
- Preheat the oven to 375º F and grease and line a 9 in. x 5 in. loaf pan with parchment paper.
- Peel and core the apples, then cut in quarters and thinly slice with a mandolin.
- Add apples to a large bowl and toss with lemon juice.
- In a medium bowl combine melted butter, sugar, salt, vanilla, and eggs. Whisk together until well combined.
- Add the flour and the milk and mix until the batter is smooth.
- Pour the batter onto the apples and mix gently until all the apples are coated evenly in the batter.
- Layer the apples into the loaf pan.
- Bake for 60-75 minutes, until the top is golden brown and the batter is cooked through completely.
- Warm the apricot jam and use a pastry brush to spread over the top.
- While the cake cools to room temperature, prepare the whipped cream. Combine the heavy cream, maple syrup, cinnamon and salt in a bowl and whisk until stiff peaks form.
- Sprinkle the cake with powdered sugar and serve with the cinnamon whipped cream.
