Invisible Apple Cake

This Invisible Apple Cake is as stunning as it is simple. It's a delicate custard cake, baked with layers of thinly sliced SweeTango® apples that melt together in the oven. The result is a light, gently sweet cake. Top with a dusting of powdered sugar and a dollop of cinnamon spiced whipped cream for the ultimate dessert.

Ingredients

Cake Batter

    • 5 SweeTango® apples, peeled and cored
    • Juice of 1 lemon
    • 2 Tbsp unsalted butter, melted
    • ¾ cup sugar
    • ½ tsp salt
    • 3 eggs, room temperature
    • 1 tsp vanilla extract
    • 1 cup flour
    • ½ cup whole milk, room temperature
    • 3 Tbsp apricot jam, warmed
    • 1 Tbsp powdered sugar for dusting

Cinnamon Whipped Cream

    • 1 cup heavy cream
    • ¼ cup maple syrup
    • 2 tsp ground cinnamon
    • Pinch of salt


      Directions

        1. Preheat the oven to 375º F and grease and line a 9 in. x 5 in. loaf pan with parchment paper.
        2. Peel and core the apples, then cut in quarters and thinly slice with a mandolin.
        3. Add apples to a large bowl and toss with lemon juice.
        4. In a medium bowl combine melted butter, sugar, salt, vanilla, and eggs. Whisk together until well combined.
        5. Add the flour and the milk and mix until the batter is smooth.
        6. Pour the batter onto the apples and mix gently until all the apples are coated evenly in the batter.
        7. Layer the apples into the loaf pan.
        8. Bake for 60-75 minutes, until the top is golden brown and the batter is cooked through completely.
        9. Warm the apricot jam and use a pastry brush to spread over the top.
        10. While the cake cools to room temperature, prepare the whipped cream. Combine the heavy cream, maple syrup, cinnamon and salt in a bowl and whisk until stiff peaks form.
        11. Sprinkle the cake with powdered sugar and serve with the cinnamon whipped cream.
